CULTURE OF FOOD AND ODISHA

 





Food is always food for everybody but if we think in wide meaning it is a part of culture. There is no definition of word food. But we can think that food is a chain (according to Science).  According to me (Mr. Jyotirmaya Prasad Behera) According to culture, the word “FOOD” means a group of people is used for consumption of their habitable whether it is cooked or not whether it is raw or ripe fruits does not matter. The matter is how a group of people consume the food for their habitable. The way of making food, collection of food, what they do for food all those have a process and the said process are different from society to society and one Geographically area to another Geographical area  which shows the culture (behavior, lifestyle, thinking) of the said society.

Everyone try to live and for life we need food and for food we have to do certain kind of work to get the food and good ideas comes to mind to live after consumption of food. Without food the creature world may die on starvation.

 

Orissa is well known for its a exotic cultures, Arts, natural landscapes and also food item.  Orissa is located on the eastern cost of Indian and Bay of Bengal and the soul of India. It may be appropriated if Orissa / Odisha called as 'the Goa of Eastern India'. Everybody is  known that Odisha is equally rich when the issue of foodstuff or cooking raised to Odisha.

Macha Ghanta is the famous odisha food. This item prepare in every house in every month. The normally days the veg dishes are prepared like as Rice, dal, curries, khatta, saga, pithas and non-veg dishes are Egg, chicken and mutton.

 

The Culture of Orissa is influenced by the Mogul emperor and British colonial during its history. the middle and east side of Odisha is still continued in his tradition and culture. specially the people of outside of Orissa enjoy the food of Orissa but Orissa’s people cannot compromise with the food of outside of Orissa.

What you eat and how you prepare it which gives a lot ideas about the person you are. Food sheds light on the people's way of life, their cultural values and their perspectives on life. Food and culture are interwoven. The processes involved in preparing, serving and sharing certain foods and drinks might appear simple, but they often carry important social and cultural significance. Recipes and dietary practices can be used to transmit knowledge from one generation to another. Food looks like a small but it's importance is a lot and the preparation of foods, items and way of eating are different from one geographical area to another.

Indian food is world famous for two reasons one is Indian foods are cooked with high temperature for which we can easily digest and another is that we use spice items. For spice items India is famous and in world only India export spice item materials to other countries. Foods are very testy Due to spice item . Odisha is a provenance of  East  india and the people of odisha are used spice item on their daily basis. 

 

The food item is very from place to place but some place food of Odisha is world famous like Rasogola, Alu Dam & Dahi bara  and many more. But Some of item has been seen in TV channel " Travel" Which is worldwide coverage. 

 

The food in the region around Puri-Cuttack is greatly influenced by the Jagannath Temple which we normally called “MAHAPRASAD”. There 56 type of dishes are prepared for Lord Jagannath and in all the dished used only deshi vegetables.  On the other hand, kalonji and mustard paste are used mostly in the region bordering Bengal and curries tend to be sweeter. In the region closer to Andhra Pradesh, curry tree leaves and tamarind are used more. The Brahmapur region has influences of South Indian cuisine and the Telugu people living there have invented new Odia dishes.

 

Aloo dum, a potato-based dish, is prepared with blending of several spices and herbs. Aloo dum along with dahibara is served during several exhibitions held in the open grounds and at local festivals such as the Bali Yatra and food festival. Aloo dum and dahibara is very famous in local as well as in all India.

 

ALOO DUM AND DAHIBARA

Barabati stadium and barabati fort (ancient monument) are located at Cuttack for which particularly this place is well known to everybody in world. The aloo dum and dahibara of cuttack district is very famous. During international cricket match the cricket player as well as audience comes to this place and enjoy this item by consuming aloo dum and dahibara. Every person likes to eat aloo dum and dahibara dish. aloo dum and dahibara is also available in part of odisha but in this place having such charm and fun to eat. 

 

DAHI PAKHALA

On the part of the East and central Odisha, the famous Dahi Pakhala (Cured and water rice). This type of food is prepared during summer day. This item is famous in this region because of hot during the day time. Specially this dish is prepared for lunch not for dinner. The benefit of this dish is that it keep the stomach cool during summer day. Dahi Pakhala is a package because one can not be satisfied Dahi Pakhala without fish fry.

 

MACHA GHANTA (MIXED FISH FRY)

 

The people of Odisha is collected the foods from natural source like river, Lacks and Sea. The cost of non-veg is more comfortable then the price of Vegetable. Maximum peoples are Hindu and they have a tradition to eat non-veg particular days. Mainly Macha Ghanta is made on Sunday or Friday. In many occasion, the people of Odisha is made Macha Ghanta like marriage ceremony, death ceremony and many more occasion.    

Therefore need more calories for energy for which rice, dal,  some veg curry and fish is for nonveg food. The farmers like to cultivate vegetables in their garden and orissa has fill of natural source for catching fish. like lake and river and pond also.  Now days to fulfill the wants of peoples, many educated peoples are farming the fish as profession and earning good incomes.

Orissa is the coastal area of India and main junction to catch the fish and export the outside of States. Chandibali, paradeep and baluga are famous for catching and farming the fish. 

 

The other dish have also made in odisha but those are derived from other place like Rasmalai which is derived from Bengal, Gupchup which is derived from western India and the south Odisha’s dishes are derived from Andre Pradesh.

From the food one can simply understand that the food have important place in culture of Odisha. Odisha also famous for food which relates the past history of Odisha. The spice item  were also export to the outside of India during ancient time. Most important thing is that the people donot compromise them for eating. During ancient time food was prepared in a mud pot but now days it is converted to material pot.

Many foreigners like food culture of Odisha. In Bhubaneswar, Orissa / Odisha has conducted the food festival in every year and many persons were / are participated and coming from other states also. There is an unique culture in odisha
